RECIPE:Wicked Meatball Sub

  • Breadcrumbs¼ cup

  • White onion, grated¼ cup

  • Garlic, minced1 clove

  • Italian seasoning1 teaspoon

  • Sea salt½ teaspoon

  • Black pepper, freshly ground½ teaspoon

  • Olive oil¼ cup

  • Tomato sauce2 cups

  • Sub buns, split4 buns

  • Shredded mozzarella cheese2 cups

  • Parmesan cheese, grated¼ cup

  • Fresh basilas needed

Cooking directions

  1. Mix together the ground chicken, egg, breadcrumbs, onion, garlic, Italian seasoning, salt and pepper.

  2. Once you have mixed everything together, divide the mixture into 16 meatballs.

  3. Heat the olive oil in a large skillet over medium heat. Once the oil is hot, cook the meatballs in batches until the meatballs have browned on all sides.

  4. Add the tomato sauce to the skillet and slowly bring it to a boil.

  5. Reduce the heat and cook for 20 minutes or until the sauce has thickened and the meatballs are fully cooked.

  6. Turn your oven onto broil. Open the sub buns and place them onto a foil lined baking sheet. Place the meatballs and sauce over the top of the buns.

  7. Add the mozzarella and parmesan cheese to the top of the meatballs and sauce.

  8. Broil the meatballs for a few minutes or until the cheese has melted and the bread has toasted.

  9. Place the basil on the sub before serving.
