RECIPE:Side of Salmon with Salsa Verde

Extra Virgin Olive Oilto coat
Pink Himalayan Saltto coat
Black Peppercorn, fresh groundto coat

Salsa Verde
Garlic cloves, peeled2
Flat leaf parsley1 bunch
Scallions½ bunch
Anchovy filets2
Capers2 Tbsp
Olive oil1/3 cup
Water1 Tbsp
Lemon zest2 Tsp
Lemon juice1 Tbsp
Salt and pepperto taste
Preheat oven to 375ºF
Season side of salmon with olive oil, salt, pepper, lemon pepper and paprika.
Cover a baking sheet with foil and spray with oil. Place salmon skin side down onto the foil.
Bake salmon for 14-20 minutes, or until the salmon is cooked through.
While the salmon cooks, combine garlic, parsley, scallions, anchovies, capers, water, lemon zest and juice in a blender. Blend until mixed. With motor running, add olive oil in a stream, adding additional water if needed to blend. Add salt and pepper to taste. Serve with salmon.
