RECIPE:Sausage, Chicken and Shrimp Jambalaya

Fully Cooked Smoked Andouille Pork Sausages
500g
Chicken Breast Chunks
1 lb.
Cooked Large White Shrimp, 31-40CT
1 lb.
Cajun Seasoning
1 Tbsp.
Olive oil2 tablespoons
Onion, small dice1 onion
Red bell pepper, small dice1 pepper
Celery, small dice2 stalks
Diced tomatoes28 oz. can
Chicken broth2 cups
Dried thyme½ teaspoon
Dried oregano2 teaspoons
Cayenne pepper½ teaspoon
Add the olive oil to a cast iron skillet oven on medium high heat.
Add the chicken to the pan and cook until browned.
Remove the chicken and add in the onion, bell pepper and celery.
Cook for 5 – 7 minutes, stirring every few minutes.
Reduce the heat and add the chicken, tomatoes, chicken broth, thyme, oregano, Cajun seasoning and cayenne and cook, covered, for 15 – 20 minutes.
Add the shrimp and sausage, stir, and cook for 4 – 5 minutes, uncovered, before serving over rice.
