Olive Oil, divided3 tablespoons

Salted Butter1 tablespoon

Sea Salt½ teaspoon

Black Pepper¼ teaspoon

Thyme¼ teaspoon

Garlic Powder¼ teaspoon

Paprika¼ teaspoon

Lemon Juice, freshly squeezed1 teaspoon

Fresh Cilantro1 sprig

Cooking directions

  1. Preheat oven to 400°F.

  2. Drizzle olive oil over both sides of the chicken breast. Season with salt, pepper, paprika, garlic powder and thyme.

  3. Heat 1 teaspoon of olive oil in a cast iron skillet over medium heat. Add Butter.

  4. Add the chicken, skin side down. Cook for 5 minutes, without trying to move the chicken.

  5. Turn and place in the oven.

  6. Bake for 15-20 minutes, or until a thermometer inserted into the thickest part of the meat, without touching the bone reads 165°F.

  7. Take out of the oven, let the meat rest for 5 -10 minutes, then slice.
