RECIPE:Miso Glazed Salmon and Noodles

Sea salt1 teaspoon
Miso Glaze
Miso paste3 tablespoons
White sugar3 tablespoons
Mirin1 tablespoon
Sake1 tablespoon
Spring onions, cut thinly on a bias, for garnishas needed
Black sesame seeds, for garnishas needed
Sprinkle salt over the salmon fillet evenly and cover with plastic wrap to leave for 15 minutes.
Wipe excess moisture off the salmon with kitchen paper towel.
Mix the miso, sugar, mirin, and sake all together.
Place the salmon fillet in a shallow dish and coat the salmon with miso marinade.
Leave the marinade for 8 hours or overnight in the refrigerator.
Remove the excess miso marinade carefully.
Place the salmon on a baking sheet lined oven tray.
Grill or Broil the salmon for about 6 minutes under 410°F on the bottom row in the oven.
Turn the salmon over once and cook another 6 minutes in the oven.
Turn it back and glaze with miso marinade with a brush and put the tray back to the oven for one minute.
Serve the glazed salmon on top of noodles.
Garnish with roasted sesame seeds and finely chopped green shallots.
