RECIPE:Milanesa Steak

Breadcrumbs2 cups
Eggs3 eggs
AP Flour1 cup
Garlic Cloves, minced2 cloves
Pepper, freshly ground, divided1 teaspoon
Sea Salt, divided2 teaspoons
Olive Oil4 fl. oz.
Lightly pound the steaks to tenderize and create uniform 1/8-inch-thick cutlets. Lay the steaks on a sheet pan and season both sides with half the salt and pepper.
Place the breadcrumbs in a casserole pan and mix with the other half of salt and pepper.
In a mixing bowl, beat the eggs with the garlic.
Fill a high-sided skillet with ½ inch of vegetable oil and heat over medium heat.
Dust the steaks with the flour and then dip the steak into the eggs. Once coated in the egg mixture, place the steaks into the breadcrumbs. Make sure the steaks are fully coated, pressing into the breadcrumbs if necessary.
Carefully place the steaks into the hot oil and fry on each side for 2 – 3 minutes or until golden brown.
Once fried, place the steaks on a cooling rack or plate with paper towel to allow excess oil to drain or be absorbed.
