RECIPE:Mediterranean Grilled Chicken Pizza

Ingredients

  • Chicken Breast Slices

  • Pizza dough1 pizza dough

  • Olive oil2 tablespoons

  • Garlic, grated2 cloves

  • Fresh oregano¼ cup

  • Mozzarella cheese, shredded1 cup

  • Feta cheese, crumbled½ cup

  • Roasted red pepper, sliced1 pepper

  • Saltto season

  • Garlic Powderto season

  • Onion Powderto season

  • Paprikato season


Cooking directions

  1. Add the olive oil to a cast iron skillet and preheat it to medium high heat.

  2. Season chicken slices with salt, pepper, paprika, garlic powder & onion powder.

  3. Once skillet is hot, add the chicken slices and cook, about 2 - 3 minutes per side.

Oven Instructions

  1. Shape the pizza dough into the desired form on a baking sheet, brush with the mixture of olive oil, garlic and oregano.

  2. Sprinkle on the cheeses, chicken and roasted red peppers.

  3. Bake in a preheated 425-degree F oven until the cheese has melted and the crust is crispy and golden brown, about 10-15 minutes.

  4. Best served with freshly made tzatziki sauce.

Grill Instructions

  1. Preheat the grill for high direct heat.

  2. Shape the pizza dough by flattening it with your hands on a slightly floured surface.

  3. Once the grill is hot, dip a tightly folded up paper towel in olive oil and use tongs to wipe the grill grates. Then place a pizza dough on a lightly floured rimless cookie sheet or pizza peel. Let the dough slide off the cookie sheet onto the hot grill grates. Close the lid of the grill and let cook for 2 minutes.

  4. Once the pizza dough has browned lightly on one side, use your cookie sheet or pizza peel to remove it from the grill. Use a spatula to flip the dough over so that the grilled side is now up.

  5. Brush with the mixture of olive oil, garlic and oregano. Sprinkle on the cheeses, chicken and roasted red peppers.

  6. Place the pizza back on the grill, close the lid and cook for 2 to 3 minutes more, or until the bottom begins to char and the cheese is bubbly. 

  7. Best served with freshly made tzatziki sauce.
