RECIPE:Irish Boar Stew

All-purpose flour1/3 cup
Sea salt1 teaspoon
Black pepper, freshly ground¼ teaspoon
Canola oil1 tablespoon
Large yellow onion, medium diced1 onion
Garlic, minced3 cloves
Beef broth½ cup
Stout beer1 can
Red wine vinegar2 tablespoons
Baby potatoes, quartered8 potatoes
Carrots, medium diced4 carrots
Leeks, thinly sliced1 cup
Caraway seeds1 teaspoon
Dried thyme1 teaspoon
1 bay leaf1 bay leaf
Fresh parsley, leaves picked for garnishas needed
Salt and ground black pepperas needed
Black pepper, freshly groundas needed
In large bowl, combine flour, salt and pepper. Dredge boar cubes in seasoned flour; shake off excess.
In a cast iron skillet, heat the oil over medium-high heat. Brown cubes on all sides turning occasionally.
Add onion and garlic; cook and stir, about 5 minutes.
Add remaining ingredients, scraping brown bits from the bottom of the skillet while stirring.
Bring contents to a boil. Cover. Reduce heat to low. Simmer for 1 to 1-1/4 hours or until meat is very tender, stirring occasionally.
Ladle stew into bowls; garnish with the parsley leaves. Season with additional salt and pepper according to taste.
