  • All-purpose flour1/3 cup

  • Sea salt1 teaspoon

  • Black pepper, freshly ground¼ teaspoon

  • Canola oil1 tablespoon

  • Large yellow onion, medium diced1 onion

  • Garlic, minced3 cloves

  • Beef broth½ cup

  • Stout beer1 can

  • Red wine vinegar2 tablespoons

  • Baby potatoes, quartered8 potatoes

  • Carrots, medium diced4 carrots

  • Leeks, thinly sliced1 cup

  • Caraway seeds1 teaspoon

  • Dried thyme1 teaspoon

  • 1 bay leaf1 bay leaf

  • Fresh parsley, leaves picked for garnishas needed

  • Salt and ground black pepperas needed

  • Black pepper, freshly groundas needed


Cooking directions

  1. In large bowl, combine flour, salt and pepper. Dredge boar cubes in seasoned flour; shake off excess.

  2. In a cast iron skillet, heat the oil over medium-high heat. Brown cubes on all sides turning occasionally.

  3. Add onion and garlic; cook and stir, about 5 minutes.

  4. Add remaining ingredients, scraping brown bits from the bottom of the skillet while stirring.

  5. Bring contents to a boil. Cover. Reduce heat to low. Simmer for 1 to 1-1/4 hours or until meat is very tender, stirring occasionally.

  6. Ladle stew into bowls; garnish with the parsley leaves. Season with additional salt and pepper according to taste.
