RECIPE:Indian Spiced Lamb Chops with Cucumber Salad

Olive oil3 tablespoons
Ground cumin2 teaspoons
Ground coriander1 tablespoon
Nutmeg½ teaspoon
Turmeric2 teaspoons
Chilli powder2 teaspoons
Ground cardamom½ teaspoon
Fresh ginger finely grated1 teaspoon
Ground cinnamon1 teaspoon
Garlic cloves finely grated3 cloves
Salt2 teaspoons
Black pepper1 teaspoon
Lemon wedges to serveas needed
Sliced red chili peppers to serveas needed
Cilantro leaves to serveas needed
Cucumber Salad
Baby cucumbers, sliced6 cucumbers
Red onion peeled1 large red onion
3 tbsp lemon juice/white vinegar3 tablespoons
1 tsp sugar1 teaspoon
salt and pepperto taste
To make the cucumber salad, Slice the cucumber and onion thinly and add to a medium bowl.
Dissolve the sugar in the lemon juice and add the salt and pepper. Pour over the cucumber and onion and allow to marinate for 10-15 minutes before serving.
Combine all the spices, garlic, ginger, and olive oil in a small bowl and set aside.
Rub the spice mixture into the lamb chops and repeat on the other side. Leave the chops with the rub on for 30 minutes before cooking.
Pan-fry/grill the lamb chops in a pre-heated pan/grill. You can also cook the lamb in the oven or on an outdoor grill.
Cook your lamb chops for 3-4 minutes per side and allow to rest for 5 minutes before serving.
Serve with sliced chilis and cilantro leaves over the lamb.
Finish off the plate with lemon wedges.
