RECIPE:Grilled Huli Huli Chicken with Pineapple and Rice

Pineapple4 spears
Green onionsas needed
Jasmine rice1 cup
Coconut milk200 mL
Water½ cup
Sugar½ tbsp
Salt¼ tsp
Preheat a gas grill to medium high heat.
Rinse and drain rice until the water runs clear.
In a pot with the rice add coconut milk, water, salt and sugar.
Bring to a boil over high heat. Once it starts to boil, turn the heat down to a simmer and cook covered for 15 minutes. Turn heat off and let sit covered for another 15 minutes.
Grill chicken on preheated grill, until it reaches 165 degrees F in center.
Once the chicken has finished cooking set it aside to rest.
Place the pineapple spears onto the grill and grill until distinct grill marks have appeared.
Serve the chicken and pineapple with coconut rice and green onions.
