  • Chicken Tikka Thighs

  • Red peppers, sliced1

  • Red onions, sliced1

  • Sweet potatoes, cut into wedges1

  • Tikka masala paste200 ml

  • Baby spinach320 g


Cooking directions

  1. Preheat oven to 375 degrees F.

  2. Combine all the ingredients, except the spinach, in a shallow roasting tray.

  3. Roast for 45 minutes.

  4. Stir once or twice during cooking for an even bake.

  5. Once the chicken's cooked, stir in the spinach.

  6. Allow the spinach to wilt before serving up.
