Ingredients

  • Fully Cooked Smoked Maple Pork Breakfast Sausages

  • Soft medium flour tortillas4 tortillas

  • Red pepper, chopped½ pepper

  • Red onion, finely chopped¼ red onion

  • Tomatoes, cubed¼ cup

  • Unsalted butter1 tablespoon

  • Shredded cheese1 cup

Egg Mixture

  • Eggs6 eggs

  • Half and half cream2 tablespoons

  • Sea saltas needed

  • Black pepper, freshly groundas needed


Cooking directions

  1. In a skillet, sauté the sausage to warm.

  2. Add the chopped onion and pepper to the sausage and sauté until vegetables are tender.

  3. Remove the sausage mixture from the skillet.

  4. In a bowl, combine the eggs, half and half cream and season to taste.

  5. In the same skillet, cook the eggs with 1 Tbsp butter until the eggs are cooked.

  6. Add the diced tomatoes and the sausage mixture into the eggs and mix.

  7. Lay out the tortilla, add cheese and top with the egg and meat mixture. Divide mixture among all 4 tortillas.

  8. Roll the burrito tight, by folding the edges and then rolling up the tortilla.

  9. Place the rolled burritos into a warm skillet with a splash of olive oil. Leave the burritos in the skillet allowing the burritos to brown. Once one side has browned, flip the burritos, and brown the other side.

  10. Once both sides are browned remove the burritos from the skillet, slice in half on an angle and serve.
