Side of Salmon with Salsa Verde

INGREDIENTS
Extra Virgin Olive Oil to coat
Pink Himalayan Salt to coat
Black Peppercorn, fresh ground to coat
Paprika to coat
Salsa Verde
Garlic cloves, peeled 2
Flat leaf parsley 1 bunch
Scallions ½ bunch
Anchovy filets 2
Capers 2 Tbsp
Olive oil 1/3 cup
Water 1 Tbsp
Lemon zest 2 Tsp
Lemon juice 1 Tbsp
Salt and pepper to taste
LET'S GET COOKING!
Preheat oven to 375ºF
Season side of salmon with olive oil, salt, pepper, lemon pepper and paprika.
Cover a baking sheet with foil and spray with oil. Place salmon skin side down onto the foil.
Bake salmon for 14-20 minutes, or until the salmon is cooked through.
While the salmon cooks, combine garlic, parsley, scallions, anchovies, capers, water, lemon zest and juice in a blender. Blend until mixed. With motor running, add olive oil in a stream, adding additional water if needed to blend. Add salt and pepper to taste. Serve with salmon.
