Shrimp Ceviche

INGREDIENTS
Lime juice, freshly squeezed ¾ cup
Lemon juice, freshly squeezed ¼ cup
Medium red onion, finely minced ¼ onion
Cucumber, small dice 1 cup
Jalapeno peppers, seeded and small dice 2
Cilantro, finely chopped 2 tablespoons
Medium avocado, small dice 1 avocado
LET'S GET COOKING!
Cut into bite-size pieces.
Add the cucumber, onion, minced Jalapeno peppers, and cilantro to the chopped shrimp in a bowl.
Pour over the citrus juices and a pinch of salt. Toss well, and then press the shrimp down into the liquid as much as possible. Cover and refrigerate for at least 30 minutes and up to 4 hours.
Just before serving, stir in the avocado. Taste, and then season with salt to taste.
