Seared Steak Fajitas

INGREDIENTS
Soy Sauce 1 tablespoon
Lime Juice, freshly squeezed ¼ cup
Lime Wedges 8 wedges
Extra Virgin Olive Oil 1 tablespoon
Garlic, minced 1 clove
Coarse Salt and Black Pepper sprinkle
Green Bell Peppers, seeded and thinly sliced 2 medium peppers
Large White Onion, halved and thinly sliced 1 onion
Tortillas, warmed 8 tortillas
White Cheddar, grated ½ cup
Roma Tomatoes, seeded and diced 2 tomatoes
Cilantro Sprigs sprinkle
LET'S GET COOKING!
In a shallow dish or bowl, combine the steak, soy sauce and ¼ cup of lime juice. Refrigerate for 1 hour rotating the steak occasionally.
In a small saucepan, heat 2 teaspoons of olive oil over medium heat. Add the garlic and cook for 30 seconds. Remove from the heat and stir in 1 tablespoon of lime juice. Set the garlic aside.
Remove the steak from the marinade and blot dry with paper towels. Season with salt and pepper. In a cast iron skillet heat 1 teaspoon of olive oil over medium high heat. Cook the steak until medium rare, about 2 minutes per side. Transfer the steak to a plate and loosely tent with foil.
Add the pepper and onions and season with salt and pepper. Cook until the vegetables are tender crisp. Once cooked, stir in the reserved garlic.
Thinly slice the steak and serve with vegetables, warm tortillas, cheese, tomatoes, and cilantro.
