Sausage, Chicken and Shrimp Jambalaya

INGREDIENTS
Olive oil 2 tablespoons
Onion, small dice 1 onion
Red bell pepper, small dice 1 pepper
Celery, small dice 2 stalks
Diced tomatoes 28 oz. can
Chicken broth 2 cups
Dried thyme ½ teaspoon
Dried oregano 2 teaspoons
Cayenne pepper ½ teaspoon
LET'S GET COOKING!
Add the olive oil to a cast iron skillet oven on medium high heat.
Add the chicken to the pan and cook until browned.
Remove the chicken and add in the onion, bell pepper and celery.
Cook for 5 – 7 minutes, stirring every few minutes.
Reduce the heat and add the chicken, tomatoes, chicken broth, thyme, oregano, Cajun seasoning and cayenne and cook, covered, for 15 – 20 minutes.
Add the shrimp and sausage, stir, and cook for 4 – 5 minutes, uncovered, before serving over rice.
