Indian Spiced Lamb Chops with Cucumber Salad

INGREDIENTS
Olive oil 3 tablespoons
Ground cumin 2 teaspoons
Ground coriander 1 tablespoon
Nutmeg ½ teaspoon
Turmeric 2 teaspoons
Chilli powder 2 teaspoons
Ground cardamom ½ teaspoon
Fresh ginger finely grated 1 teaspoon
Ground cinnamon 1 teaspoon
Garlic cloves finely grated 3 cloves
Salt 2 teaspoons
Black pepper 1 teaspoon
Lemon wedges to serve as needed
Sliced red chili peppers to serve as needed
Cilantro leaves to serve as needed
Cucumber Salad
Baby cucumbers, sliced 6 cucumbers
Red onion peeled 1 large red onion
3 tbsp lemon juice/white vinegar 3 tablespoons
1 tsp sugar 1 teaspoon
salt and pepper to taste
LET'S GET COOKING!
To make the cucumber salad, Slice the cucumber and onion thinly and add to a medium bowl.
Dissolve the sugar in the lemon juice and add the salt and pepper. Pour over the cucumber and onion and allow to marinate for 10-15 minutes before serving.
Combine all the spices, garlic, ginger, and olive oil in a small bowl and set aside.
Rub the spice mixture into the lamb chops and repeat on the other side. Leave the chops with the rub on for 30 minutes before cooking.
Pan-fry/grill the lamb chops in a pre-heated pan/grill. You can also cook the lamb in the oven or on an outdoor grill.
Cook your lamb chops for 3-4 minutes per side and allow to rest for 5 minutes before serving.
Serve with sliced chilis and cilantro leaves over the lamb.
Finish off the plate with lemon wedges.
