Honey Habanero Buffalo Wings

INGREDIENTS
Habanero Hot Sauce 2 tablespoons
All Purpose Seasoning as needed
Honey Habanero Buffalo Sauce:
Unsalted Butter ½ cup
Habanero Maple Hot Sauce 2/3rd cup
Habanero Peppers, sliced 3 peppers
Honey 1 tablespoon
Worcestershire Sauce 1 teaspoon
Garlic Powder 1 teaspoon
Celery Seeds ½ teaspoon
Smoked Paprika ½ teaspoon
Buttermilk Chipotle Ranch
Mayonnaise ½ cup
Buttermilk ¼ cup
Cilantro, minced ¼ cup
Lime Juice 1 tablespoon
Garlic, grated 1 clove
Fresh Chives, minced 2 teaspoons
Chipotle in Adobo Sauce 1 pepper
Kosher Salt as needed
Black Pepper, freshly ground as needed
LET'S GET COOKING!
To make the Buttermilk Chipotle Ranch dressing, combine all ingredients in a blender. Blend until smooth. Store in the refrigerator for up to a week.
To make the Honey Habanero Buffalo Sauce, melt the butter in a saucepan. Add the remaining ingredients. Whisk to incorporate. Bring to a simmer. Cook for a few minutes to infuse the seasonings. Transfer to a Vitamix Blender. Blend until smooth and light orange in color. Cool to room temperature. The butter may separate, so whisk again until all ingredients are distributed. Store in the refrigerator until ready to use.
Coat the wings with a thin layer (about 2 tablespoons) of Habanero Maple Hot Sauce and toss to coat. Season with all-purpose seasoning.
Preheat a BBQ to medium heat. Once hot, place the wings onto the grill over indirect heat. Cook the wings for 25 – 30 minutes.
Turn the BBQ to high heat and move the wings to the direct heat side of the grill and continue to cook until the wings have caramelized and achieved nice grill markings.
Place the wings in a large mixing bowl. Add all the Honey Habanero Buffalo Sauce and toss to coat.
Serve the Honey Habanero Buffalo Wings with the Buttermilk Chipotle Ranch, for dipping.
