Honey Ginger Pork Loin Roast

INGREDIENTS
Honey 3 tablespoons
Sherry Vinegar 2 tablespoons
Fresh Ginger, peeled, grated 1 tablespoon
Black Pepper, freshly ground 1 teaspoon
Kosher Salt, divided ¾ teaspoon
LET'S GET COOKING!
Preheat your oven to 350°F.
Combine honey, vinegar, ginger, and 3/4 teaspoon pepper in a small bowl, stirring with a whisk. Place 4 teaspoons honey mixture in a small bowl; set aside.
Heat a cast iron skillet pan over medium heat. Coat the pan with cooking spray. Rub the pork with 1/2 teaspoon salt. Add pork to the skillet and sear for 12 minutes. Turning to brown on all sides.
Brush the pork with the remaining honey mixture and place the skillet into the oven and cook until you have achieved your desired degree of doneness.
Remove the pork from the oven and place on a cutting board. Let it stand for 5 minutes. Cut across the grain in 1-inch slices.
Drizzle the remaining 4 teaspoons of the honey mixture on top of the pork.
