Herb Roasted Sea Bream with Garlic Dill Butter Sauce

INGREDIENTS
Kosher salt 1 ½ teaspoons
Black pepper ½ teaspoon
Olive oil 2 tablespoons
Stuffing for the Sea Bream
Fresh dill sprigs ½ cup
Parsley leaves, freshly picked ½ cup
Garlic cloves, finely sliced 4 cloves
Lemon, cut into slices 8 slices
LET'S GET COOKING!
Preheat your oven to 425°F. Line a tray with parchment paper.
Make three cuts on each side of the fish, cutting through flesh down to the bone
Sprinkle a bit of salt and pepper inside the cavity of the fish. Scatter the cavity with garlic slices, then stuff with parsley and dill. Layer lemons on top of herbs.
Using kitchen string make 3 ties to hold fish together.
Sprinkle salt and pepper on the skin (both sides), including a bit on the head of the fish. Then drizzle with olive oil. Rub all over the fish, including in the cuts.
Place fish on prepared tray. Bake for 20 minutes or until the internal temperature is 130°F.
Remove the fish from the oven, transfer to serving platter and leave it to rest for 5 minutes.
While the fish is resting, place the butter in a saucepan over medium-high heat and melt down. Remove from heat and stir in extra dill if you like.
Serve the fish with the Lemon & herb finishing butter sauce on the side.
