Decadent Bison Rib Roast

INGREDIENTS
Garlic cloves, minced 8 cloves
Olive oil 2 tablespoons
Sea salt 2 teaspoons
Black pepper, freshly ground 2 teaspoons
Dried thyme 2 teaspoons
Horseradish as needed
LET'S GET COOKING!
In a small bowl, mix the garlic, olive oil, salt, pepper, and thyme.
Place the roast into a roasting pan with the fat cap facing upwards.
Spread the mixture over the top and the sides of the roast.
Place the roasting pan in the refrigerator for 4 hours to marinate.
Preheat an oven to 450 degrees F.
Place the roasting pan in the oven and roast for 20 minutes.
After 20 minutes, reduce the temperature to 325 degrees and continue to roast until you have reached an internal temperature 10 degrees below your desired degree of doneness.
Remove the roasting pan from the oven and let the roast rest for 30 minutes.
Carve the roast to your desired thickness and serve with favourite side dishes.
Serve with pan drippings and horseradish.
