Chicken Stir Fry with Shitake and Green Beans

INGREDIENTS
Soy Sauce ¼ cup
Cornstarch 1 tablespoon
Canola Oil 4 tablespoons
Green Beans 1 cup
Shitake Mushrooms, stems removed 1 cup
Garlic Cloves, minced 3 cloves
Fresh Ginger, minced 1 tablespoon
Jalapeno Pepper, sliced 1 pepper
Green Onions, thinly sliced, for garnish 2 stalks
Toasted Sesame Seeds, for garnish 1 tablespoon
SAUCE:
Chicken Broth ½ cup
Soy Sauce 4 tablespoons
Chili Sauce 2 tablespoons
Sugar 1 tablespoon
Cornstarch 1 teaspoon
Sesame Oil 1 tablespoon
LET'S GET COOKING!
Place thawed chicken strips in a colander and using paper towels, pat dry. Transfer to a bowl and toss with soy sauce. Sprinkle the cornstarch and toss. Set aside.
Heat 1 tablespoon of oil in a large non-stick skillet on high heat. Add a small batch of chicken and stir fry for 2-3 minutes. Transfer to a bowl and repeat with the remaining chicken. Add more oil, stir-fry green beans, add shiitake mushrooms and continue to stir-fry a few more minutes. Add garlic, ginger, and chili pepper and after stir frying for 30 seconds, add chicken back into the skillet.
In a small bowl, combine ingredients of sauce in a bowl. Add to skillet stirring constantly. Bring to a simmer and cook until slightly thickened, about 1 minute.
Transfer to a platter and garnish with green onions and sesame seeds.
