Bison Sliders with Asian Slaw

INGREDIENTS
Rice wine vinegar ¼ cup
Prepared wasabi 1 tablespoon
White (green) cabbage, shredded 1 cup
Red onion, peeled, quartered, and thinly sliced ½ cup
Avocado 1
Sambal paste 1 tablespoon
Tomatoes, diced 1 cup
Fresh cilantro ¼ cup
salt to taste as needed
LET'S GET COOKING!
To prepare the slaw, stir the vinegar and wasabi together in a bowl. Add the cabbage and onions. Allow this mixture to marinate for 30 to 60 minutes or until the onions and cabbage are soft.
To prepare the dressing, slice the avocado in half, remove the seed, and scoop the “meat” of the avocado into a mixing bowl. Mash the avocado with a spoon until smooth.
Add the sambal, tomato, cilantro, and salt (to taste) to the avocado mash. Mix well, then cover and hold until serving.
Place the slider patty onto the grill of a heated BBQ. Flip and cook until the internal temperature of the burger reaches 165 degrees F. The last minute of cooking place buns on the grill if desired.
To construct your sliders, drain the cabbage and add about 1 tbsp of slaw to each bun. Then add your bison and finish with 1 tbsp of your tomato avocado dressing.
