Bison Goulash

INGREDIENTS
Onions, halved and sliced ¼ inch 2 onions
Salted butter 1 tablespoon
Olive oil 1 tablespoon
Caraway seeds 1 teaspoon
Paprika 2 tablespoons
All-purpose flour ¼ cup
Beef broth 2 cups
Tomato paste 1 can
Sea salt as needed
Black pepper, freshly ground as needed
Carrots, large dice 3 carrots
Small white potatoes, large dice 5 potatoes
Chopped parsley and sour cream for garnish as needed
LET'S GET COOKING!
Heat the olive oil and butter in a large cast iron skillet over medium heat. Add in the sliced onion and cook until tender and fragrant. Add the caraway seeds and paprika. Stir to combine.
Put the flour in a shallow dish and lightly coat the bison stew meat, shaking off any excess flour.
Add the dusted meat to the skillet and sear on all sides, cooking with the onions.
Add the beef broth to the skillet.
Use a wooden spoon to scrape up flavorful browned bits from the bottom of the skillet.
Add the tomato paste, carrots, and potatoes. Season with sea salt and freshly ground black pepper and stir to combine.
Bring the skillet to a boil and then reduce and simmer for 2.5 hours.
Top with sour cream and parsley as desired.
