Beef Enchilada Casserole | Wild Fork
A saucy, cheesy layered casserole that keeps Lean Ground Beef moist throughout — an easy, freezer-friendly dinner that feeds a family generously.

INGREDIENTS
1 tbsp olive oil
2 cups red enchilada sauce, divided
8 small corn tortillas, torn into pieces
2 cups shredded Mexican blend cheese
Sliced green onion, for garnish

LET'S GET COOKING!
1) Preheat oven to 375°F.
2) Heat olive oil in a skillet over medium heat.
3) Brown beef with diced onion, 6-8 minutes, breaking apart as it cooks. Stir in 1/2 cup enchilada sauce.
4) In a greased 9x13-inch baking dish, layer half the torn tortillas, half the beef mixture, half the remaining enchilada sauce, and half the cheese.
5) Repeat the layers.
6) Bake 20-25 minutes, until bubbly and the cheese is melted.
7) Garnish with sliced green onion before serving.
