Steak Medallions with Cowboy Butter

INGREDIENTS
Olive oil 2 tablespoons
Sea salt, ¼ teaspoon
Black pepper, freshly ground ¼ teaspoon
LET'S GET COOKING!
Place a cast iron skillet over medium high heat. Add the olive oil and allow to get hot.
Season the steaks with salt and pepper and then place into the hot skillet.
Allow each side to achieve golden brown sear and then continue to cook the steaks until the desired degree of doneness had been achieved.
Remove the steaks from the skillet and place onto a warm plate. Place a healthy knob of cowboy butter on top of the steak. Cover loosely with foil and set aside for 5 minutes.
Add some additional cowboy butter to the steak and then serve with your favourite side dish.
