Pork Tenderloin Medallions with Apple Cider Pan Sauce | Wild Fork
An elegant but affordable dinner — pan-seared Pork Tenderloin medallions finished with a glossy apple cider pan sauce and softened apples and onion.

INGREDIENTS
2 tbsp olive oil
1 apple, sliced
1/2 onion, sliced
3/4 cup apple cider
2 tbsp butter
Salt and pepper, to taste

LET'S GET COOKING!
1) Season medallions with salt and pepper.
2) Heat olive oil in a skillet over medium-high heat; sear medallions 2-3 minutes per side, until internal temp reaches 165°F. Remove and set aside.
3) Add onion and apple to the skillet; cook 4-5 minutes until softened.
4) Pour in apple cider and simmer 5-6 minutes, until reduced by half.
5) Whisk in butter to finish the sauce.
6) Return medallions to the skillet, spoon sauce over the top, and serve.
