A quick weeknight fajita night with Pork Tenderloin instead of the usual steak — charred peppers and onions, warm tortillas, and dinner on the table in 30 minutes.

INGREDIENTS
2 bell peppers, sliced
1 onion, sliced
2 tbsp olive oil
1 tbsp chili powder
1 tsp ground cumin
8 flour tortillas, warmed
Salt and pepper, to taste

LET'S GET COOKING!
1) Toss sliced pork with chili powder, cumin, salt, and pepper.
2) Heat olive oil in a large skillet over high heat; sear pork 4-6 minutes, until browned and cooked through (165°F). Remove and set aside.
3) Add peppers and onion to the skillet; cook 6-8 minutes, until charred and softened.
4) Return pork to the skillet and toss to combine.
5) Serve with warm flour tortillas.
