Oven Roasted Bison Top Sirloin

INGREDIENTS
Salted butter, softened 3 tablespoons
Garlic cloves, minced 4 cloves
Lemon zest, grated 1 teaspoon
Sea salt as needed
Black pepper, freshly ground as needed
Fresh thyme, roughly chopped 1 teaspoon
Fresh rosemary, roughly chopped 1 teaspoon
LET'S GET COOKING!
Preheat the oven to 450 degrees F.
Place the tenderloin roast on a cutting board and pat dry with a paper down.
Rub the butter all over the tenderloin and then sprinkle on all of the remaining ingredients, pressing them into the meat on all sides.
Place the tenderloin in a roasting pan.
Cook the tenderloin for 20 minutes at 450 degrees F and check the internal temperature. If it’s not done yet, drop the oven temperature to 350 degrees F and check the internal temperature every 5-10 minutes until you have reached 5 degrees below your desired degree of doneness. The time will vary depending on the thickness of your meat.
Once you have reached your desired degree of doneness, remove the tenderloin, cover the pan with foil and allow the meat to rest for 10-15 minutes before slicing and serving.
Slice the roast into ½ inch slices
Drizzle any pan juices over the bison and serve with your favourite side dishes.
