Monterey Salmon with Cilantro Lime Butter

INGREDIENTS
Cilantro Butter
Butter, softened 3 Tbsp
Garlic clove, minced 1 Clove
Lime juice, freshly squeezed 1/2 lime
Cilantro, minced 3 Tbsp
Bowl Ingredients
Rice, cooked 1 cup
Mango, cubed to garnish
Jalapeño, sliced to garnish
Avocado, sliced to garnish
Pickled Red Onion to garnish
LET'S GET COOKING!
Leave the butter on the counter to soften. Add in garlic, cilantro and lime juice. Mix to combine.
Form the butter into balls and keep in the fridge until ready to serve.
Prepare ingredients for bowl. Start by cooking rice as per packaging instructions. Cut mango, avocado, lime & jalapeño and set aside.
Heat 1 Tbsp of olive oil in a cast iron skillet on medium-high heat. Once hot, sear salmon for 2-3 minutes per side, flipping once. Leave alone to let a crust form.
Add all ingredients into a bowl and place the salmon portion with a spoonful of cilantro lime butter on top.
