Irish Boar Stew

INGREDIENTS
All-purpose flour 1/3 cup
Sea salt 1 teaspoon
Black pepper, freshly ground ¼ teaspoon
Canola oil 1 tablespoon
Large yellow onion, medium diced 1 onion
Garlic, minced 3 cloves
Beef broth ½ cup
Stout beer 1 can
Red wine vinegar 2 tablespoons
Baby potatoes, quartered 8 potatoes
Carrots, medium diced 4 carrots
Leeks, thinly sliced 1 cup
Caraway seeds 1 teaspoon
Dried thyme 1 teaspoon
1 bay leaf 1 bay leaf
Fresh parsley, leaves picked for garnish as needed
Salt and ground black pepper as needed
Black pepper, freshly ground as needed
LET'S GET COOKING!
In large bowl, combine flour, salt and pepper. Dredge boar cubes in seasoned flour; shake off excess.
In a cast iron skillet, heat the oil over medium-high heat. Brown cubes on all sides turning occasionally.
Add onion and garlic; cook and stir, about 5 minutes.
Add remaining ingredients, scraping brown bits from the bottom of the skillet while stirring.
Bring contents to a boil. Cover. Reduce heat to low. Simmer for 1 to 1-1/4 hours or until meat is very tender, stirring occasionally.
Ladle stew into bowls; garnish with the parsley leaves. Season with additional salt and pepper according to taste.
