Honey Dijon Salmon

INGREDIENTS
Olive oil 2 tablespoon
Mustard, use whole grain or Dijon 3 tablespoons
Garlic cloves, minced 2
Salt and Pepper
For serving:
Mash Potato
Cauliflower
LET'S GET COOKING!
STEPS - Preheat oven to 375 F
STEP 1 - PREP THE SALMON
- In a small mixing bowl, combine olive oil, mustard, garlic, salt, and pepper in a small bowl.
- Lay salmon down on an oiled, parchment-lined, baking sheet and generously coat salmon with mustard mixture using a brush or the back of a spoon.
STEP 2 - COOK THE SALMON
- Bake salmon for about 10 to 12 minutes or until the internal temperature at the thickest part reaches 145F on an instant-read thermometer. For a crispy top crust, broil for 1-2 minutes.
- While the salmon is cooking, follow the package instructions to heat Truffle Mashed Potatoes.
- Lightly steam the Cauliflower Florets and reserve warm until ready to serve.
STEP 3 – PUTTING IT ALL TOGETHER
- Serve salmon hot with heated Truffle Mashed Potatoes & Cauliflower Florets. Garnish with lemon wedges to squeeze on top!
