Grilled Berkshire Pork Chop with Pineapple

INGREDIENTS
Olive Oil ¼ cup
Garlic Cloves, minced 5 cloves
Pork Seasoning as needed
Sea Salt as needed
Fresh Thyme Leaves 1 tablespoon
Fresh Pineapple, cut into spears ½ pineapple
Spicy Mojo Seasoning as needed
Fresh Thyme Leaves, for garnish as needed
LET'S GET COOKING!
In a small bowl, combine olive oil, garlic cloves, sea salt, pork seasoning, black pepper, and thyme leaves. Rub pork on both sides with seasoning. Marinate in the refrigerator for at least ½ hour.
Preheat grill to medium high heat. Place marinated pork chop on the grill and cook 6-7 minutes on each side or until you have achieved your desired degree of doneness.
Cut the fresh pineapple in spears, sprinkle with Spicy Mojo Seasoning and place on the grill until slightly charred. Cut into 1 “pieces and serve with the pork chops.
