Cedar Planked Salmon Bowl

INGREDIENTS
Cucumbers, seeded, julienned 3 cucumbers
Carrots, shredded 2 cups
Red bell peppers, thinly sliced 3 peppers
Green onions, julienned, both white & green parts 5 scallions
Sesame seeds black and white, or combination 3 tablespoons
Sesame Vinegar Dressing
Rice wine vinegar 3 tablespoons
Toasted sesame oil 2 tablespoons
Honey 1 tablespoon
Lime, juiced ½ lime
Redd pepper flakes pinch
Sea salt as needed
Black pepper, freshly ground as needed
LET'S GET COOKING!
To prepare the dressing, combine the rice wine vinegar, toasted sesame oil, honey, lime juice and red pepper flakes in a bowl or jar. Stir to combine well, taste and season with salt and pepper as needed. Set aside.
To prepare the salmon, simply cook directly on cedar plank in 425-degree oven or grill for 18-20 minutes.
Build the bowl by layering cucumbers, carrots, bell pepper and top with dressing. Sprinkle green onions, sesame seeds over top and add portion of grilled cedar plank salmon on top.
