Beef Broccoli

INGREDIENTS
For the sauce:
Low-sodium beef broth 1/2 c.
Reduced-sodium soy sauce 3 Tbsp.
Light brown sugar 2 Tbsp
Cornstarch 1 Tbsp.
Shaoxing wine or dry sherry 1 tsp.
Toasted sesame oil 1 tsp.
Freshly ground black pepper
For the Steak and Broccoli
Garlic cloves, minced 3
Reduced-sodium soy sauce 1 Tbsp.
Cornstarch 1 Tbsp.
Ginger cubes
Shaoxing wine or dry sherry 2 tsp.
Rice
Vegetable oil 2 Tbsp.
LET'S GET COOKING!
STEP 1 - PREP THE SAUCE
- In a medium heatproof bowl, whisk broth, soy sauce, brown sugar, cornstarch, and wine.
- Microwave on high, stirring halfway through, until sauce is thickened, about 2 minutes. Stir in oil; season with salt and black pepper.
STEP 2 – COOK THE STEAK AND BROCCOLI
- In another medium mixing bowl, toss steak with garlic, soy sauce, cornstarch, ginger, and wine. Let marinate for 5 minutes. Add broccoli and oil and toss to combine.
- Arrange half of steak and broccoli mixture in a single layer in an air fryer basket. Cook at 400° until steak is just cooked through and broccoli is tender. About 8 to 10 minutes. Remove cooked steak and broccoli mixture and place in the bowl with sauce.
- Repeat with remaining steak and broccoli mixture, then toss to coat in sauce.
- While the steak is cooking, follow the package instructions to heat Rice Pilaf Blend.
STEP 3 – PUTTING IT ALL TOGETHER
- Divide rice among 4 bowls and top with hot Beef and Broccoli mixture.
- Garnish the bowl with thinly sliced scallion and/or toasted sesame seeds.
